Coffee Cake
Ingredients
- ¾ cup unsalted butter
- 1 ½ cups packed light brown sugar
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup buttermilk or sour cream
- 1 large egg, beaten
- 1 teaspoon pure vanilla extract
- ½ teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- Butter a 13x9 baking pan.
- In a large bowl, cut the butter in to the brown sugar and flour with a
pastry blender or 2 knives until crumbly. Remove and reserve 1 cup of the
mixture for topping.
- Beat the baking soda into the buttermilk or sour cream and add to the flour
mixture.
- Add the egg, vanilla, and salt.
- Stir until smooth.
- Scrape the batter into the prepared pan, smooth the top.
- Sprink the reserved crumbs over the top.
- Bake the cake until golden brown, about 30 minutes.
- Cool to lukewarm on a wire rack.
- Cut into rectangles and serve warm.
